{"id":593,"date":"2024-12-19T14:20:13","date_gmt":"2024-12-19T22:20:13","guid":{"rendered":"https:\/\/lindacullen.ca\/blog\/?p=593"},"modified":"2024-12-20T15:30:42","modified_gmt":"2024-12-20T23:30:42","slug":"merry-christmas-happy-holidays","status":"publish","type":"post","link":"https:\/\/lindacullen.ca\/blog\/merry-christmas-happy-holidays\/","title":{"rendered":"Merry Christmas &#8211; Happy Holidays"},"content":{"rendered":"<p><a href=\"https:\/\/www.youtube.com\/watch?v=AMDg2IhH3kg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter wp-image-596\" src=\"https:\/\/lindacullen.ca\/blog\/wp-content\/uploads\/2024\/12\/linda-makes-melting-moments-1024x576.jpg\" alt=\"\" width=\"640\" height=\"360\" srcset=\"https:\/\/lindacullen.ca\/blog\/wp-content\/uploads\/2024\/12\/linda-makes-melting-moments-1024x576.jpg 1024w, https:\/\/lindacullen.ca\/blog\/wp-content\/uploads\/2024\/12\/linda-makes-melting-moments-300x169.jpg 300w, https:\/\/lindacullen.ca\/blog\/wp-content\/uploads\/2024\/12\/linda-makes-melting-moments-768x432.jpg 768w, https:\/\/lindacullen.ca\/blog\/wp-content\/uploads\/2024\/12\/linda-makes-melting-moments.jpg 1245w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Let&#8217;s face it, even when we think we&#8217;ve given people the perfect gift, sometimes those presents actually SUCK.<\/p>\n<p>And can lead to things sucking for the receiver of said gift.<\/p>\n<p>Join me for a few minutes and I&#8217;ll explain&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.youtube.com\/watch?v=AMDg2IhH3kg\"><strong><span style=\"color: #0000ff;\">Watch Linda&#8217;s Video Here<\/span><\/strong><\/a><\/p>\n<div><\/div>\n<h2><span style=\"color: #ff0000;\">MELTING MOMENTS COOKIES RECIPE<\/span><\/h2>\n<div>(As I mentioned, I think my Mom&#8217;s recipe was a bit different, but this one is close enough.\u00a0 It&#8217;s from a Robin Hood add I ripped out of a magazine years ago.)<\/div>\n<p>&nbsp;<\/p>\n<div><strong>FILLING INGREDIENTS<br \/>\n<\/strong><\/div>\n<div>1\/2 cup (125 mL) butter (unsalted)<\/div>\n<div>1-1\/2 cups (375 mL) icing sugar<\/div>\n<div>1 tsp (5 mL) pure vanilla extract<\/div>\n<div>1\/4 cup (50 mL) whipped cream <em><strong>or <\/strong><\/em>2-3 tbsp (30-40 mL) milk, divided*<\/div>\n<p>&nbsp;<\/p>\n<div><strong>COOKIES INGREDIENTS<br \/>\n<\/strong><\/div>\n<div>1 cup (250 mL) Robin Hood All Purpose Flour (or your flour of choice)<\/div>\n<div>1\/2\u00a0 cup (125 mL) Robin Hood Cake &amp; Pastry Flour (again, your choice)<\/div>\n<div>1\/2 cup (125 mL) Fleischmann&#8217;s Canada Corn Starch (I guess the same company, so use what you like)<\/div>\n<div>1\/2\u00a0 tsp (2 mL) baking powder<\/div>\n<div>1\/4 tsp (1 mL) salt<\/div>\n<div>1 cup (250 mL) butter (unsalted), softened<\/div>\n<div>1 cup (250 mL) icing sugar<\/div>\n<div>1 tsp (5 mL) pure vanilla extract<\/div>\n<div>Icing sugar for dusting<\/div>\n<p>&nbsp;<\/p>\n<div><strong>FILLING DIRECTIONS<br \/>\n<\/strong><\/div>\n<ul>\n<li>In a medium saucepan, heat butter over medium heat until melted.\u00a0 Continue cooking, stirring constantly, just until the butter begins to turn a golden brown, about 5 minutes.\u00a0 Immediately remove from heat.<\/li>\n<li>In a small bowl, strain butter through a coffee filter or paper towel.\u00a0 Cool for 30 minutes.\u00a0 When butter is cold but still liquid, beat with icing sugar and vanilla.\u00a0 Add whipped cream 1 tbsp (15 mL) at a time, and beat until smooth.<\/li>\n<\/ul>\n<div><strong>COOKIES DIRECTIONS<\/strong><\/div>\n<ul>\n<li>Preheat oven to 300F (149C). LIne baking sheets with parchment paper.<\/li>\n<li>In a medium bowl, sift flours, corn starch, baking powder and salt.\u00a0 Reserve.<\/li>\n<li>In a large bowl, beat butter, icing sugar and vanilla until smooth and lighter in colour.\u00a0 Mix in dry ingredients just until incorporated and a smooth dough forms.<\/li>\n<li>Roll dough into balls with your hand using a scant 1 tsp (5 mL) and place 2&#8243; (5 cm) apart on prepared baking sheets.\u00a0 Flatten the cookies in 3\/4&#8243; (1.9 cm) disks.<\/li>\n<li>Bake in preheated oven for 13-15 minutes.\u00a0 Cool on wire rack, 10 minutes.<\/li>\n<\/ul>\n<div><strong>ASSEMBLY<\/strong><\/div>\n<ul>\n<li>Spread underside of 1 cookie with filling.\u00a0 Sandwich with another cookie, flat side down.\u00a0 Repeat with remaining\u00a0cookies and filling.\u00a0 Dust with icing sugar, if desired.<\/li>\n<\/ul>\n<div><\/div>\n<div><strong>TIP<\/strong><\/div>\n<ul>\n<li>Filling can be made up to 2 days in advance and kept in refrigerator.\u00a0 Bring to room temperature, 1 hour before using.<\/li>\n<\/ul>\n<div><\/div>\n<div>* It says Whipped cream, but it doesn&#8217;t mention actually whipping it, so I think it really means Whipping cream.\u00a0 Might make a little difference, but I thought it was worth mentioning.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><em><strong>ENJOY THE MELT IN YOUR MOUTH DELICIOUSNESS!<\/strong><\/em><\/div>\n<div><\/div>\n","protected":false},"excerpt":{"rendered":"<p>Let&#8217;s face it, even when we think we&#8217;ve given people the perfect gift, sometimes those presents actually SUCK.
